I am a morning news junkie, more precisely a LOCAL morning news junkie, so I tune in to our local “News 4 New York” station every morning upon rising to learn of the current state of The City.

“News 4 New York” has their studios situated at Rockefeller Plaza, and so as each segment is bidding bye-bye and fades into the vast land of commercials, there is always an outside shot of Rockefeller Plaza in real time.  I first saw the 2107 edition of the springtime art at The Plaza on TV last month, and it intrigued me.

It is called “Seated Ballerina”, and it stands in the same spot as the famous Rockefeller Center Christmas Tree.  Due to popular demand, it will stay put a few weeks longer than anticipated this year, closing on July 5th to make way for the summer art in The Plaza.

Yesterday was one of those true summer-solstice days – the second of three consecutive spectacular days we have been enjoying – and mid-morning while in the kitchen I heard what a thought was the sound of a sea plane approaching the River for a landing.  But after a minute, I realized what I was hearing was no sea plane, so I walked to the window to see what was going on.

Dave and I found ourselves walking through the lobby of The MetLife Building this past Saturday, and I was delighted by what we saw there.  They were putting up the Christmas decorations!

When I was working in Midtown, I was always amazed at how quickly these decorations went up between the time I left for home on Thanksgiving Eve, and the following Monday morning when the legions returned to work.  Now I was finally privy!

Actually, they were just beginning the procedure and we found it fascinating.   Dave and I had never really thought about how the staffs at the magnificent buildings in Midtown put everything together, and now we have our answer: cherry pickers!

It makes perfect sense, if you think about it:

This particular display has a warm place in my heart.  Years before I moved into the city, I would get to and from my Metro North train to Connecticut via the MetLife Building. Back then, they used to hold an annual Toy Drive where you could leave wrapped gifts within a low white picket fence they put up around the tree. Cotton and fake snowflakes covered the floor inside those fences.  Now, in these crazy times, wrapped presents are discouraged, and the Toy Drive has gone away.  BUT, the tree and the spectacular wreaths that surround the lobby of the building have stayed.  These years, a choir will appear from time to time throughout the season, and you can’t help but smile.

Dave and I decided to stay a few minutes and watch:

It wouldn’t be Thanksgiving without my posting one “Thanksgiving Leftover’s” post, so here is one of my favorites: Turkey Enchiladas.

You’ll note that I use canned enchilada sauce in this dish, but I figure since we have been cooking our hearts out for the last week, it’s OK to take a short-cut.  This time of year more than any other, short-cuts rule!

Enjoy the last tastes of my favorite holiday before we turn our focus on to Christmas!

Turkey Enchiladas

  • 1 cup mild salsa
  • 20 ounces canned red enchilada sauce
  • 1 teaspoon chopped chipotle chili in adobo sauce (or more if you like it spicy)
  • ½ cup chopped fresh cilantro, plus more for garnish
  • 8 ounces cream cheese, softened to room temperature
  • ½ cup sour cream
  • 6 cups shredded cooked turkey (white meat, dark meat, or a combination of both)
  • ½ teaspoon salt
  • 8 ounces grated Pepper Jack cheese
  • 6 large flour tortillas

Preheat oven to 350⁰.

In a small saucepan, combine the salsa, enchilada sauce, and chipotle chili; simmer together over medium heat for 15 minutes.  Remove from heat and stir in the cilantro.  Set aside.

In a large bowl, combine the softened cream cheese and sour cream until well mixed.  Add ½ cup of the enchilada sauce and salt; stir to combine.  Add the cooked turkey and stir until the turkey is nicely coated.

Cover the bottom of a 13x9x2-inch baking dish with a thin coat of the enchilada sauce.

Spoon 1 cup of the turkey mixture into the center of each tortilla and spread the mixture across the center of the tortilla.  Sprinkle with cheese, and fold the tortilla over to cover the filling; roll the tortilla to enclose the filling and place each tortilla side-by-side, seam-side down in the baking dish.  Cover the tortillas with the remaining enchilada sauce and sprinkle with remaining cheese.

Cover the baking dish with aluminum foil and bake the enchiladas 15 minutes.  Uncover and continue baking for another 10 minutes, until the enchiladas are completely heated through and the sauce is bubbling.

Sprinkle the enchiladas with extra cilantro and serve hot.  (These are great served over rice with black beans on the side.)

Happy day after Thanksgiving!  I hope your holiday was a safe, delicious and wonderful one.

Last year I received some terrific feedback on a recipe I posted after Thanksgiving Day for “Slow-Cooker Turkey Stock”.  I was so delighted by the ease and flavor of this recipe, that I decided I would never make another turkey stock any other way.

This recipe also proved to be reliable throughout the rest of the year:  take the carcasses of rotisserie chickens to make a deep and rich stock overnight, and you’ll have a homemade stock you can rely on time and time again.  (I usually make the chicken stock using 2 carcasses at a time – an NO, I don’t go through 2 rotisserie chicken at a time, I just thrown the carcass of one into the freezer and wait until I have another carcass to add to it!)  Add in some onions, celery, and carrots, cover with water, and set the slow-cooker on low.

This is a fool-proof recipe.  Sit back a bit and enjoy the ease and the taste.  After all of those hours of cooking these past few days, you deserve a break.  Take one!

This recipe will yield 2 1/2 to 3 quarts turkey stock.

The best part of this recipe?  You can plug the filled slow cooker into a socket in any room (providing you do so on a flat surface), and save up that much-coveted kitchen counter space for all of the chopping and mixing that comes with Thanksgiving cooking.

I don’t often toot my own horn, but I am especially proud of this recipe as it was the very first thing I made when I was recovering from my foot injury earlier this year.  Standing for long periods of time was not an option, so my slow cooker – which I was already very fond of – became my best friend for a while there.

While I was putting this together (in April), I was thinking that if this dish came out OK, I would pass it along to my cousin Terry who has the challenge of adding a substantial dish to her holiday table so that her vegetarian son and his girlfriend can enjoy the feast as much as the meat eaters.  Well, I was VERY happy with the finished dish – as was Dave – so I’ve saved it up for my Thanksgiving posts.

There is a family-based irony to this recipe as well.  When we were growing up and every holiday took place at my parents house, my mother served her mile-high, meat laden, incredibly delicious lasagna AS A FIRST COURSE before the turkey and all of the trimmings came out (including her meat-based stuffing).  When we kids were finally old and brave enough, we joined in solidarity to beg her to not make the lasagna, as it was too good to pass up and we could never fully enjoy all of the other creations she put forth that day.  She fumed for a couple of years, but eventually let it go.  I know many, many Italian-American kids who tell the same story – it’s a part of our heritage, after all.  And here I am, now offering a lasagna recipe for Thanksgiving!

Even if you are not expecting vegetarians this Thanksgiving, do try this recipe some other time.  You’ll be glad you did.  I know I plan to make it again and again.  And I must once again declare my love for my slow cooker.  Whether I am injured or not, it rocks!

Slow Cooker Spinach and Mushroom Lasagna

  • 2 15-ounce tubs ricotta cheese
  • 2 eggs
  • ¼ to ½ grated Romano cheese
  • 2 tablespoons dried parsley flakes
  • 1 10-ounce package frozen chopped spinach, thawed
  • 1 8-ounce package cremini mushrooms, cleaned and sliced
  • 10-12 pieces dried lasagna noodles
  • 2 quarts marinara sauce (jarred is fine)
  • 6 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

In a large bowl, mix the ricotta cheese, the eggs, the Romano cheese, and the parsley flakes until they are fully combined.

Using your hands, squeeze all of the moisture out of the thawed spinach, and add the spinach to the cheese mixture.  Stir well to combine.

Add the mushroom slices to the mixture, and stir well to combine.

Cover the bottom of a 6-quart slow cooker insert with marinara sauce.

Cover the marinara sauce with 3-4 pieces of lasagna noodles, breaking some in pieces in order to completely cover the sauce.

Add 1/3 of the cheese and vegetable mixture on top of the noodles, and spread evenly to completely cover the noodles.

Cover the cheese and vegetable mixture with a layer of marinara sauce, spreading the sauce out to completely cover the mixture.

Cover the marinara sauce with 2 cups of the shredded mozzarella cheese.

Repeat this process twice, starting with the noodles, then the cheese and vegetable mixture, then the sauce, then the mozzarella cheese.  Your very last layer should be the mozzarella cheese.

Sprinkle the top of the lasagna with the Parmesan cheese.

Cover the slow cooker and cook the lasagna on LOW for 4 hours.  (If not serving the lasagna soon, let the lasagna keep on WARM.)

About  45 minutes before you are planning to serve the lasagna, turn off the slow cooker and uncover the lasagna to let it set for at least 40 minutes.  (Don’t worry – the mixture will still be hot when served.)

This lasagna will yield 10-12 servings.

Slow Cooker Spinach and Mushroom Lasagna

  • 2 15-ounce tubs ricotta cheese
  • 2 eggs
  • ¼ to ½ freshly Romano cheese
  • 2 tablespoons dried parsley flakes
  • 1 10-ounce package frozen chopped spinach, thawed
  • 1 8-ounce package cremini mushrooms, cleaned and sliced
  • 10-12 pieces dried lasagna noodles
  • 2 quarts marinara sauce (jarred is fine)
  • 6 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

In a large bowl, mix the ricotta cheese, the eggs, the Romano cheese, and the parsley flakes until they are fully combined.

Using your hands, squeeze all of the moisture out of the thawed spinach, and add the spinach to the cheese mixture.  Stir well to combine.

Add the mushroom slices to the mixture, and stir well to combine.

Cover the bottom of a 6-quart slow cooker insert with marinara sauce.

Cover the marinara sauce with 3-4 pieces of lasagna noodles, breaking some in pieces in order to completely cover the sauce.

Add 1/3 of the cheese and vegetable mixture on top of the noodles, and spread evenly to completely cover the noodles.

Cover the cheese and vegetable mixture with a layer of marinara sauce, spreading the sauce out to completely cover the mixture.

Cover the marinara sauce with 2 cups of the shredded mozzarella cheese.

Repeat this process twice, starting with the noodles, then the cheese and vegetable mixture, then the sauce, then the mozzarella cheese.  Your very last layer should be the mozzarella cheese.

Sprinkle the top of the lasagna with the Parmesan cheese.

Cover the slow cooker and cook the lasagna on LOW for 4 hours.  (If not serving the lasagna soon, let the lasagna keep on WARM.)

About  45 minutes before you are planning to serve the lasagna, turn off the slow cooker and uncover the lasagna to let it set for at least 40 minutes.  (Don’t worry – the mixture will still be hot when served.)

This lasagna will yield 10-12 servings
